We tried to digest boiled egg whites using the pepsin solution with and without a couple drops of 1M HCl (total volume ~4ml) @37C and we were unable to detect any activity whatsoever. We reconstituted per instructions and used it fresh, 3ml of pepsin soln to 1ml egg whites. If we did this experiment incorrectly, Id appreciate feedback. Otherwise maybe I should have purchased the regular lab grade pepsin. Thanks.
